Our grandparents (Nonni) grew up in small towns in Italy where they would hand cut pork, hand stuff the intestines, and hang it from the ceiling, in their kitchens, during the winter. They did this because the fire in the family room kept the kitchen just above freezing so the Sausage could properly dehydrate and they had no electricity or technology. All these years later, we have grinders and refrigeration to help with the process, but "2 NONNI" got started using those same techniques of old fashioned dehydration. Our family has been in the restaurant business since 1958, we have 4 generations working together and we make all of our food from scratch. That hard work, dedication and inspiration has fueled every single recipe of the 2 NONNI brand.
